When it comes to getting photos done I AM THE WORST. Levi got his photos done a few times after he was born, at Walmart. I just don’t make it that much of a priority, can’t do it all I guess.

If it wasn’t for my sister and her talents and nice camera I probably wouldn’t have had this done. But finally after 5 years of marriage and 3 babies we got around to some family photos! Now we need to pick what to order!

This quick post was written so my hubby could check them out while at work, since he can access some sites, like my bloggy poo. I would really love to get back into regularly blogging again, my camera needs fixed and well it’s just not so exciting without having nice photos to post from day to day.

It’s only 4 pm and I’m so ready for bed, neither boys napped today, that’s becoming a common occurrence lately, not something I am ready to let go of. As a mother I NEED NAP TIME. Not to sleep, but to get things done around the house, get on the treadmill, eat in peace. I NEED an hour or two of peace and quiet.  There should not be a gap between stopping of the naps and going to school.  We were planning on holding Levi back two more years and sending him when he’s almost 6 1/2  but 2 more YEARS?!?!? AHHHH. God and I have been getting closer lately though, that’s probably a good thing that’s coming from my mental state at the time.

Funny how you can be so busy and overwhelmed raising children but at the same time feel completely blessed and your heart so happy with thankfulness for the little miracles God has given you.

Happy Wednesday! I’m sorry I haven’t been posting much, or have I already said that? I am amazed how some bloggers out there have such awesome sites when they have kids, especially a lot of them. By the time mine are in bed all I’ve been wanting to do is surf pinterest for design ideas and of course food inspiration.

As the many ideas, and I mean many many many ideas I have floating through my head continue to just float around in there until I figure out some kind of routine for posting, let’s just reunite with a little What I ate Wednesday.

I have no idea what the current theme is, but I do have some food for you, and I guess that’s all that really matters today.

Over the last week I’ve been snacking on some Easy Energy Bites that Michelle of EatMoveBalance created, I’m really surprised I still have a few laying around, the first two days I had them I couldn’t stop eating them, so I boxed them up and put them in the downstairs freezer for a special treat that would take more effort to get too, haha.

Even Ben tried one, coconut and all! (He’s not a fan of coconut, but I’ve been surprised lately that he’s been trying things I make with it in, since I LOVE MY COCONUT!) If you love no bake energy bites that are portable and great for a quick snack when you don’t have time to whip up something healthy, I recommend having some of these in your fridge (or freezer far away downstairs).

I replaced my mixer with our juicer to switch it up a little in my diet, I snack a lot so having this on the counter and easily accessible makes it great to replace one of my many snacks of cottage cheese and yogurt with something even healthier! This particular glass had a whole cucumber and a whole gala apple, with some orange stevia, and ice! So refreshing.

I cracked open a can of pumpkin the other day when I had a craving for well pumpkin, to make this yummy pumpkin oatmeal.  Topped with pumpkin seeds, coconut flakes, dried cranberries, and some soy milk.

The can of pumpkin continued to get used with a batch of pumpkin spice chocolate chip cookies (skinnytaste) for my mom.

Then I got a little creative and make some raw carrot-cake pumpkin bars, I know weird, but good. Even the boys each had one!

This was them pre-cut, I think they may be recipe worthy sometime soon, I would have sooner but I ate them all before giving them a formal photo shoot.

Now for the star of the day, Raw oatmeal! I started reading about a raw foods diet a few months back and of course I was more concerned about how people that eat raw were able to have “oatmeal”, since most oatmeal I eat is cooked, with occasional overnight oats thrown in from time to time (which I love!) and if I’d ever consider trying going raw, I’d still need my oatmeal.

I did a little research and got some ideas, I don’t have a fully RAW stocked pantry since I still eat most of my food cooked, so I did what I could with what I had on hand. 

Some people who eat a raw diet make their own milks, homemade raw almond milk, or cashew milk are two of the favorites. I would like to try to make my own sometime soon.  I just used water, since water I had, and water is raw, haha. (See, that was easy)

I soaked 1/4 cup steel cut oats in about 3/4 water over night.

In the morning I drained most of the water, left just a little extra, maybe a tablespoon at most.

Put the oats in a small food processor along with about 1 tsp raw protein powder, cinnamon, and stevia. Oh and about 1 tsp of chia seeds as well.

Poured the raw oat mixture into a bowl and then topped with some sliced strawberries, raw sunflower seeds, and flaked coconut!

IT. WAS. DIVINE.

A little chewy, obviously, but the soaking makes the oats edible. And processing them makes them a tad smaller.

I know I’m not the only one that has lived with countertops that aren’t the most attractive color, nor am I the only one who has a very limited budget and new countertops, even laminate, is not an option. 

Thankfully the original color of ours weren’t that bad, a pale peachy pink color, it could have been worse.  They are also in great great shape.  I’ve always known painting your laminate countertops was possible, but have always been way too scared to do something. Then I discovered a kit make by Rustoleum that you could purchase to transform your countertops OR cabinets! They have different kits available for different sizes of kitchens.  If you have a slightly higher budget available I think these kits would be great, and I was very very tempted to save up for them, at least the countertops.  So check out Rustoleum Tranformations and see if it’s something that would make your kitchen look amazing. 

But if that is still out of reach for your budget, take matters into your owns hands and be brave, take a deep breath and get crafty! Let’s do this.

See pale pink isn’t SO bad, but I like decorating and making my home well to my taste, and this is not so much my taste. Some people would be okay with these and that’s fine.  But you can’t argue with me when you see the after results…

First I researched a bunch because I needed some convincing from other real people that had successfully completed painting their countertops.

Then I found instructions (click for original instructions!) on Pretty Handy Girl’s Blog.

I won’t go into detail on the steps, you can find them at the link above, I followed them exactly, the only thing different I did was used different colors, and polyurethane for the top coat, instead of Water-based Polycyclic Protective Finish in Clear Gloss (I really wish I would have tried that, but the guy at the store convinced me Polyurethane was the best way to go, I do need to apply a few more coats sometime, so I may try and find something better, I’ll update when I do!)

The colors (in order as I applied them to my countertops) I used:

    I bought mine at JoAnn’s.

1. Burnt Sienna (Brand Americana) This helped tie in the color of my cabinets.

2. Khaki Tan (Americana) I dapped this on heavier, like really heavy.  I have lots of counter-space and needed about 3 bottles of this one, also because I used it again in another layer, but smaller blotches)

3. Metallic 14K Gold (Brand- Ceramcoat) Okay, don’t freak out, YES GOLD!, Small blotches randomly placed for a little sheen here and there.

    *After I had these first three colors layered I was in semi-freak out mode because it looked like Christmas Puke, don’t give up, keep going it’ll get better!

4. Dark Chocolate (Americana) Things started to change after I started applying this color, for the good, at this point I did a lot of blotching covering up most of the red and gold tones…I also used a few bottles of this, and again layered it again (as my last layer…)

5. Lamp (Ebony) Black (Americana) Be the most careful with the black, you can always go back and add more…I followed the tip in the blog instructions and used half a piece of paper when putting on the black.

6. Khaki Tan- I went over the countertops again with this after the black, not as heavy as the first time I used it but trying to cover more of any white spots left and more of the Sienna and Gold colors.

7. Dark Chocolate- This was the last color I ended with, and I’m happy I did, I almost stopped at the second layer of the Tan color but Ben said he didn’t think it looked right. 

If you are going for a different color of “granite” find a sample piece online, or you can get little chip samples of laminate colors from Lowes for free, take them to the craft store and match up your colors! It’s really that easy. 

And wear a mask when finishing up the project with the Polyurethane, I think it made me a little Ill, ick.  Keep your windows open for a few days, and fans going.

I used brown paper bags while I painted the colors, it was easy to throw away and get new ones for each color and coat I did.

I used one coat of oil-based primer, Odorless Kilz brand (you can get non-odorless for a few bucks cheaper).

I didn’t cover my cabinets, just taped up around the walls and such, I like to live dangerously, if you aren’t as careful or don’t trust yourself make sure to protect anything of value. 

Be proud of your hardwork and money saved! I’m still waiting for a celebration dinner for some Sushi, I hope Ben reads this post haha. No Seriously Ben, I’m craving sushi.

I had plans of laying around all day practically near death, but I took a few Advil and it worked it’s power and I was able to function (almost normally, but still a little blah inside) and get some stuff done.  I hung two loads of laundry out, played baseball with the boys, watered the flowers, showered (definitely helps getting cleaned up, I looked awful.), took some photos of the children, and walked to the park and played and walked back! Wow, so much for my plans of being couch ridden and pinterest all day.

I’ve had no appetite what so ever today, although I could tell I was so hungry, nothing sounded good and I nibbled on a bunch of stuff trying to find something that agreed with my belly, the two main things that didn’t really bother me were Eden’s strawberry puffs and some kettle corn.  The more I try eating though the more blah I would feel again. After our walk we got home late around 8:15 p.m and the boys were hungry, so I threw them together some chicken nuggets and left over mac n cheese that daddy had made them for lunch while I was laying on the couch. He’s such a good husband and father. While at the park I was getting pretty hungry again but wanted something “light and refreshing” verses anything heavy like my normal huge plate of roasted veggies for dinner, ick, vegetables just sound gross right now. A protein smoothie sounded the best way to go…

I thought about making a Kale shake originally, but once I got home I just wanted something simple and smooth. I opted for a chocolate/banana flavor.

Simple Chocolate Banana Protein Smoothie

serves 1

Ice (about 8 cubes)

1 cup Unsweetened Almond Milk

1/2 cup Water

1 scoop Garden of Life Raw Protein (or your protein powder of choice)

1 Tbsp. Dark Cocoa Powder

4 chunks of frozen Banana (about 1/2 of a large one)

Vanilla Liquid Stevia

Directions: Blend all ingredients up in a blender!

This really hit the spot and will hopefully tie me over through the night and hopefully I get my appetite back soon, I’d really love a big bowl of oatmeal or yogurt soon Sad smile .  Now I’m off to bed, totally exhausted and it’s been a long day!

I love quick breads. I love muffins. Muffin love trumps bread love. Why? Simple reason really, when I make a loaf of bread Ben either 1. ignores it because he has to cut it to get it, or 2. He does cut it and makes a crumby mess everywhere. So if I just make batter into muffins we all win, Ben (or the boys) can quickly and easy grab and eat one, meaning they won’t go to waste, and they won’t make a mess. You could argue though that with kids they crumbs would still end up all over the dang house either way, and well this is true.

Ah much better, imitation handcrafted “granite”! If anyone is interested I might possibly be able to do a few posts on the process I went through to do this project, until then, you can find the main tutorial that I closely followed HERE.

When I put it all together this evening, I wanted to surprise Ben with the final product and some yummy baked goodness. Ben LOVES banana bread, and I just of course has a few bananas on the counter near death.  I SO SO SO wanted to make Banana BREAD, but I especially did not want messes in my NEW kitchen that I worked so hard on.

Although I followed my general muffin measurement formula for when I create new muffin recipes, this batch only gave me 10. Two reasons, I really piled the batter in those cups, and two, I had quite a few large spoonful’s myself, I was starving. I can always tell how my muffins will be by the taste of the batter, If I end up not wanting to make them into muffins and want to just sit down with the bowl and lick it clean, then I know it’ll be a winner.

Winners they were. It’s almost as if the one on the right is smiling at me, you know you have a good muffin when it smiles at you. I’m pretty sure chocolate and sushi smile at me ALL THE TIME. I should have married a sushi chef, okay getting off track…

I’ve been keeping a secret. A secret that might make some quit reading and find something else to do/make.

Gound Flax.

Oopps. Oh stop it, it won’t kill you, and you can’t taste it.

Banana Almond (flax) Chip Muffins

makes 10 muffins, piled high and few spoonfuls of batter for the chef.

3 medium ripe Bananas

1/2 cup Plain Greek Yogurt

1/4 cup Honey

2/3 cup Stevia in the Raw

1/2 cup chopped/slivered Almonds

2 Eggs

1 tsp. Almond Extract

1 cup Whole Wheat Pastry Flour

2/3 cup Quick Oats

1/4 cup Ground Flax Seed

1 tsp. Cinnamon

1/2 tsp. Cloves

2 tsp. Baking Powder

1/2 tsp. Baking Soda

 

Directions: Because I didn’t want to make a mess in my kitchen I was able to mix these up in one medium-large bowl.  Preheat your oven to 350 degrees, and line a regular sized muffin tin with PARHCMENT paper liners (only the best for fat-free baking). First throw in your bananas and mash with a fork very well.  Then add yogurt, honey, stevia, almonds, eggs, and extract until blended well.  After blended throw in your flour, oats, flax, cinnamon and cloves, stir again.  When your oven is preheated stir in at the last minute the baking powder and baking soda.  Using a meatball scooper fill the muffin cups to the top and slightly over (but not like making a mess over the top type thing.) Bake for 25 minutes.  Yum.

I want another, but I really could use some sleep after not getting much last night and a long day today. Yawn.

One thing is for sure, I’ve definitely earned my metabolism this past week. It’s been non-stop working, moving, and well eating.  (Hey, eating does keep that metabolism up too ya know!)

It all started last Sunday when my sister came to hang out at my house after a long morning of church and a family reunion, I got the craving to create something in the kitchen and Allisyn agreed, I put her to work doing the fun stuff! (haha)

We made Apple Cinnamon Muffins (That are similar to my Lean Green Muffins, but their not green and a little sweeter).

They turned out so beautiful and fluffy. My sister had to take it a step further and drizzle (more like drench!) some warm caramel syrup over hers.

That evening we had a softball double header.

I cooked a spaghetti squash for the first time, COOLEST THING EVER. Had my doubts, but it really shreds into “noodles”. Even the boys were convinced and ate a bowl of “Spaghetti” with marinara!

Some other morning the boys and I made some whole wheat oatmeal (eggless) pancakes, Levi really loves cooking with me, he also loves smiling with his whole face and looks like this in every photo haha.

I sorta adapted the recipe from one in this book that I bought almost 2 years ago after finding out about Judah’s allergies.

I’ve been REALLY ENJOYING my oatmeal topped with Powdered Peanut Butter instead of my usual sugar free syrup, I’m feeling better already, although I will admit that I have been using it a little here and there, but definitely not as much.

Like I said, Levi’s really been loving helping me cook.  He made a soup all by himself, it was fun to let him get creative and just put whatever he wanted in it.  He put lots of vegetables in (some canned, some frozen, some fresh!) and even put seasonings in for me. I shredded up the chicken though. He did put a few pieces in but I ended up finding the chicken neck in a bowl.

Then to go along with the soup I created some Honey Whole Wheat Flax Bread, since I know how much Ben loves having homemade bread to go along with certain types of meals. (soups, lasagna…etc.) I must have accidently deleted the photo I had of the entire loaf.  It make two pretty loaves, the second is almost gone and I just made this yesterday.

You can even use the dough and make them into Rolls, like I did to take to my mother in laws for dinner tomorrow.

Don’t even get me started on Operation Fatten Eden up, let’s just say it’s going pretty well now, her favorite is Corn Casserole. Good news is it helps with her poor constipation, thankfully because we all know getting a baby to eat prunes is not the easiest thing.

Moving on, lately I’ve been on an organizing kick.  I’ve never been the hoarder-type, I find it pretty easy to get rid of (donate, toss) things without shedding tears. I’m all about simplicity and trying for the most part to only keep the bare minimal. I’ve still got some areas to work on in the house, but here’s some of the projects/areas I’ve recently tackled in making my house perfectly organized.

Oh the “under the sink” mess, I really wish I would have taken a before photo, but I was WAY to excited to get it cleaned up and forgot until I had everything ripped out.

I WAS going to rest and enjoy a break while the kids napped yesterday but after opening the refrigerator and seeing crap dripped all down the side I had no choice but to sacrifice my quiet time and rip that thing apart. I’ve always been good with keeping the fridge cleaned at least monthly, but this time I just HAD to pull everything out and really disinfect. I even discovered I could put a light on the bottom, almost feels like I have a new fridge! (almost) I still have to get to the freezer, next week…next week. (Maybe)

Someday I’d love a brand spanking new fridge with double doors, this one is good for now, the only thing that sucks is the shelves on the side fall off somethings, and well that’s not good, I try to keep them “unheavy” but I can only do so much, I’ve had a few disasters.  BUT besides car issues, every place we’ve lived since being married (5 years ago!) SOMETHING is wrong with our refrigerator!

This here is in our Dining room, where I’m going to keep all our “Memories” each child has a box that I will organized by year with a few photos of them throughout their lives, so when I die it’s all ready for them to have, haha. The bottom shelf in the green box is for shoes, and the box next to that on the right is where their baby books are located.  The shelf above that is where I’ll be putting the albums (if I ever get around to buying some) for all our photos. I’m also going to have a clock for each kiddos shelf that is set to the time they were born, Levi’s (top shelf) already has a clock, which is set to 11:56. Cute huh?

Personalized photo boxes for each of my babies.

Not pictured is my porch, which is yet another project I’m working on, the other day I cleaned up all the recyclables (yuck, they were overflowing!) WASHED the buckets (even yuckier!) and organized our garbage/recycle center.  It’s just one of those things you constantly have to keep clean and on top of or it becomes disastrous! (one of my favorite words of all time.)

After putting the kids to bed I settled down to relax with my bag of popcorn and do some Pinterest browsing. First I started looking for ideas on organizing my pantry, which caused me to pretty much want to blow out a wall of my kitchen and add on a butler’s pantry. Which would be fitting since I’m technically a Butler, BUT I’m pretty sure that is project #67 on the priority list. So then came a major chocolate craving, I neeeeeded something chocolate.  A few of the things that crossed my mind to grab in the house: M+M’s, little kitkats or twix bars, dove chocolate pieces….eh I wanted something voluminous and low calorie so I could enjoy more than 2 seconds of chocolate heaven. A few of the yummy treats I came across while searching for “healthy chocolate”, haha…

Yea, that’s going in my recipe box, drool. But definitely couldn’t make it tonight, I needed something QUICK!

Double Chocolate Brownie Batter Pancakes

I’m sorry, this isn’t making you hungry it is? Another of Katie’s creations, but definitely way too filling for 10 p.m. I needed something sorta cold, refreshing, lite…so I just headed to the kitchen to find some inpiration.

And this is what I came back to my room with. A delicious, mega chocolately, creamy, refreshing, smoothie. All for 60ish calories, give or take a few. I used our baby blender so I wouldn’t wake the children, that would be bad. IMG_3078

60ish Calorie Mega Chocolate Smoothie

8 ice cubes

1 cup unsweetened almond milk

2 Tbsp. dark cocoa powder

2 packets stevia

1 tsp. powdered peanut butter (optional)

1/2 tsp. Guar Gum (for thickening purposes)

1 dropper full of ORANGE NuNaturals STEVIA

 

Directions:

Blend all ingredients together until smooth.

 

The Disaster part came when I blended everything up, tried a spoonful and decided it needed more stevia.  I was just going to use some of my plain liquid stevia, but accidently grabbed my ORANGE flavored stevia and just squirt a bunch of it in, after I noticed what I did and an “oh SH*T” , I pretty much prayed it would still be good, I wanted chocolate not orange afterall.  Thankfully, the taste was SPOT on, AMAZING. I will definitely accidently grab the orange stevia for this in the very very near future.

Ah, now it’s gone, I’m full, my chocolate craving is all gone, and I’m ready for bed.
