Oh boy. Is it me or does that look like a sinful dessert? Well it’s not but it can take the place of your regular dessert and you’ll feel good about it afterwards! You can also enjoy this as a lite refreshing breakfast. For this recipe I used three large ramekins (one was REALLY large, the one pictured) but if you’d like to make a big baking dish full instead of individual servings, just double the recipe and use a large oval dish or 8×8 or 9×9 square/circle pan.
I had to sample a few bites with the healthy cream topping as well, now it’s sitting in my fridge all alone and unloved because I’m not really hungry and shouldn’t be eating, I sure can’t wait to finish it though!
Look at the “cake” hiding inside the blueberries! I know I said yesterday that I was going to have a crisp or pancake recipe for you, but we were out of milk so pancakes were out, and I wasn’t feeling all “crispy” after all when I finally got around to doing something with the blueberries we picked.
Sugar Free Blueberry Protein Cobbler (with a healthy protein cream topping!)
Makes 3 servings
1 1/2 cups Blueberries
2 tsp. Stevia in The Raw
1 whole egg
1 egg white
3 1/2 TBS Olivio Coconut Oil Spread (melted)
1/3 cup Stevia in The Raw
1 tsp. Vanilla Extract
1/3 cup Whole Wheat Pastry Flour
1/4 cup Coconut Flour
1/8 tsp. Baking Powder
1 scoop Vanilla Protein Powder
pinch of salt
1 tsp. Cinnamon
Directions:
Preheat your oven to 375 Degrees. In a small bowl stir together the blueberries and 2 tsp. Stevia in the Raw. Evenly distribute the berries among 3 large ramekins, or 4-5 smaller ones. In that same small bowl whisk together your egg and egg white, coconut oil, stevia, and vanilla. In a medium-large bowl stir together the flours, baking powder, salt, protein powder and cinnamon.
Take your wet ingredients and pour them into your bowl of dry ingredients. A thick batter will form and now just evenly spoon it overtop your blueberries. Put the ramekins on a baking tray and bake for 20 minutes.
While your little blueberry cobblers are cooling whip up some fresh protein packed “whipped topping!” Which is SO simple and easy to do!
Protein Cream Topping for Baked goods
1/2 cup Plain Chobani Greek Yogurt
10 drops Nunaturals Vanilla Liquid Stevia Extract
Just Mix these two ingredients together in a small bowl and throw on top of anything for some added protein! (and deliciousness).
Once your blueberries cobblers are cooled you can dump them upside down on a plate to serve, or you can just eat them straight out of the ramekins, with a large dollop or two of the protein cream. I like to sprinkle extra cinnamon on top to garnish as well.
